Onions and Garlic: Harvest when 80% of the tops have fallen over or died down.
Herbs: Harvest throughout the growing season. For excellent flavor, gather herbs early in the morning. Most herbs can be dried or frozen for later use.

Salsa Recipe:

  • 1 gallon prepared tomatoes and tomatillos
  • One can tomato paste
  • Two whole garlic cloves, minced
  • One onion
  • 1 cup sweet bell pepper chopped
  • 1/4 - ½  cup hot peppers chopped
  • ½ cup vinegar
  • ½ cup sugar
  • Herbs, salt, pepper according to taste
Mix all the components in a large container. Add hot peppers for desired hot and spicy flavor! Refrigerate for at least 24 hours for best flavor. Serve with your favorite tortilla chips or Mexican style dish!
